Welcome to Our Humble Abode!

I have hesitated to post pictures of our home since it's not completely set up yet. Sure, we have our furniture and some pictures up, but we plan on decorating with wedding pictures and some of our wedding gifts when we come home at the end of July. But, since it's semi set up and clean, let me give you the grand tour!


Welcome to Parkside A-8! Yes, it's a pink duplex.

Our newest purchase that we both love! A Tibetan wine bar.

These shisa lion-dogs sit on top of our cupboards and protect our home. Legend has it that the female has her mouth closed to keep all of the good things in and the male has his mouth open to let all of the bad out. No Okinawan home is complete without shisa!

Sasha's Chicken Curry

On our first date, we went to an Indian restaurant. Though I have always liked it, Ryan is also smitten with spicy curry. Since we've gotten to Okinawa, we've fallen in love with Coco's Curry House which serves tasty, spicy curry cheap and fast. Since their version is not the healthiest thing, and I want to live up to my heritage, I decided to try to make curry myself with some of the spices I brought back from India and the basmati rice my mom sent me. The result was healthy and delicious! Enjoy!

Sasha's Chicken Curry:
1/2 pound boneless, skinless chicken breasts or thighs, cut into chunks.
1 cup plain lowfat yogurt
Juice of 1/2 a lemon
1 tsp grated fresh ginger
2 cloves garlic, minced
1 tsp salt
1 tsp paprika
2 tsp chicken masala (NOT curry powder. You can find this at Indian grocery stores or finely grind a combination of coriander seeds, red chili, cumin, turmeric, salt, black pepper, cloves, and cardamom).
1 small onion, chopped
1 - 1/2 cups low sodium chicken broth.
1 tbs sour cream (optional)

Marinate the chicken in a combination of the yogurt, lemon juice, ginger, garlic, salt, paprika, and chicken masala for at least 1 hour.

In a deep skillet over medium heat, sautee onions in oil until soft. Add chicken pieces along with marinade and sautee for a few minutes to brown chicken pieces. Add chicken broth and stir.

Reduce heat to low and cover. Braise chicken for 15-20 minutes until it breaks up easily with the back of a wooden spoon. Make sure stir often so chicken doesn't stick. If the sauce gets too thick or reduces too much, add more chicken stock. Turn off the heat.

Before serving, stir in sour cream if you want. Serve over basmati rice.


**Cook's note: I also made delicious chicken skewers using the same marinade. Marinate chicken thighs in the same marinade for 24 hours. Soak skewers in water for at least 1 hour and then skewer chicken pieces with chunks of onion and bell peppers. Grill until cooked on the inside and slightly charred on the outside. Yum!

Shuri Castle

Shuri Castle, or Shuri-jo, is a gusuku (castle) and used to be the Royal palace of the Ryuku kingdom for 450 years. The original castle was destroyed in the Battle of Okinawa during World War II. It was rebuilt in 1992 and designated a World Heritage Site in 2000.

No trip to Okinawa is complete without a visit to Shuri-jo. Since we arrived in Okinawa, Ryan and I have wanted to visit Shuri-jo. Last Saturday was the perfect opportunity since Ryan didn't have to go to the office and the sun was shining. The castle was stunning! We loved it so much, we bought an annual passport that gives us unlimited visits for a year!

A Day at the Zoo!

Last Sunday, Ryan and I were stuck with a bit of a conundrum - what to do with a whole day to spend together where Ryan didn't have to work, our errands were completed, and the weather was beautiful! So, off to the Okinawa zoo we went! I was expecting to see nothing more than a few stray dogs, some fish, habu snakes, and perhaps a few birds but there was so much more!

There was also a petting zoo with turtles, baby chicks, goats, an iguana, and a snake. I was too wimpy to go in (you know me and my fear of non-humans with teeth), but Ryan had lots of fun. The only thing he wouldn't pet was the snake.

100 Days!

Just 100 days left until Ryan and I say "I do!" Woohoo! While I can't wait for that day to come, there's still so much left to do!
